Beef Casserole


Ingredients


400g diced beef
600g potatoes
400g carrots
400g leeks
1 medium onion
1 table spoon barley ( optional )
1 clove of garlic
2pts stock
small bunch of fresh thyme
salt/pepper

Method


Dice the carrots, potatoes, leeks and onion
chop the garlice fine and add into the vegetables
sweat them all off in a pot with alittle oil and butter, leave to sweat for ten minutes
in a seperate pan, brown off the beef until it reaches a good colour
when the beef is browned off, add it to the vegetables and put in the bunch of thyme
pour in the stock and bring to the boil
season to taste
cover the pot and put into the oven for one and a half hours at 180 degrees C.
